Chef Sadab Qureshi brings in authentic Lucknow flavours at Kangan

Chef Sadab Qureshi is currently with Kangan, The Westin, Koregaon Park, Pune. Chef Sadab has launched an interesting and flavoursome menu at Kangan with dishes that come straight from the heart of Lucknow.

Speaking to Desijam on the new menu and his love for cooking, chef Sadab shares, “The new menu has 12 dishes which are a mix of authentic Awadhi cuisine and a few of my experiments. I hail from the heart of Lucknow and I am here to offer the authentic flavours and textures. You will find many who claim to serve you the original. I can assure you that the dishes by me are ‘the’ ones to have,” smiles chef Sadab.

zaffrani_gulkand_phirniHe goes on to add that certain ingredients from Lucknow cuisine are difficult to locate and they have to be brought in from there. “I believe in variations and experiment but not at the cost of the taste of a dish. I am very particular with the ingredients used in every cuisine. A cuisine is popular because of its spices and method of cooking. If you don’t abide by this, then you are serving fusion and have no right to call yourself authentic,” says chef Sadab, whose favourite dish from the new menu is Adraki Chap.

adraki_chopAdraki Chap is a celebration dish which comes from the Mughals. It is a rich gravy based item which is considered a royal serve. Another favourite for him is Kakori Kebab. “The kebab was invented when a king requested the khansaman (chef) to make a dish, which the king’s old father would be able to bite. The khansaman made a kebab which was soft and easy to eat. This is how we got our Kakori Kebabs. The best part of this dish is it is quick and easy. It takes just about 5-7 minutes to cook.”
